Traditionnellement pr\u00e9par\u00e9e au poulet, elle se d\u00e9cline aussi tr\u00e8s bien \u00e0 l&rsquo;agneau pour un plat plus riche et plus g\u00e9n\u00e9reux. Voici la recette traditionnelle, la bonne fa\u00e7on de pr\u00e9parer la sauce, et la version \u00e0 l&rsquo;agneau.<\/p>\n<div class=\"bloc-info\">\n<strong>\u00c0 retenir<\/strong><\/p>\n<p>La rfissa repose sur trois \u00e9l\u00e9ments : une base de msemen ou de trid \u00e9miett\u00e9, une sauce longuement mijot\u00e9e aux oignons, lentilles et fenugrec, et une viande fondante (poulet \u00e0 l&rsquo;origine, agneau pour une version plus festive). Le fenugrec et le ras el hanout donnent \u00e0 ce plat son go\u00fbt si reconnaissable.<\/p>\n<\/div>\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que la rfissa ?<\/h2>\n<p>La rfissa est un plat traditionnel marocain \u00e0 base de pain feuillet\u00e9 (msemen ou trid) d\u00e9coup\u00e9 en fines lani\u00e8res, imbib\u00e9 d&rsquo;une sauce sans tomate, mijot\u00e9e avec du poulet, des oignons, des lentilles et un m\u00e9lange d&rsquo;\u00e9pices domin\u00e9 par le fenugrec. C&rsquo;est un plat r\u00e9confortant et complet, qu&rsquo;on sert souvent en grande tabl\u00e9e.<\/p>\n<p>La rfissa a aussi une dimension symbolique forte : elle est traditionnellement pr\u00e9par\u00e9e pour les jeunes mamans apr\u00e8s l&rsquo;accouchement, car le fenugrec est r\u00e9put\u00e9 fortifiant. On la sert \u00e9galement lors des grandes occasions, comme l&rsquo;A\u00efd el-Fitr ou un retour de voyage.<\/p>\n<h2 class=\"wp-block-heading\">Les ingr\u00e9dients de la rfissa<\/h2>\n<p>Pour 6 personnes :<\/p>\n<ul>\n<li>1 poulet fermier coup\u00e9 en morceaux (ou 1 kg d&rsquo;agneau, voir la version plus bas)<\/li>\n<li>6 \u00e0 8 msemen ou feuilles de trid (frais ou achet\u00e9s)<\/li>\n<li>3 gros oignons<\/li>\n<li>1 grand verre de lentilles vertes<\/li>\n<li>2 cuill\u00e8res \u00e0 soupe de graines de fenugrec<\/li>\n<li>1 cuill\u00e8re \u00e0 soupe de ras el hanout<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de gingembre en poudre<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de curcuma<\/li>\n<li>1 pinc\u00e9e de safran<\/li>\n<li>1 bouquet de coriandre et de persil<\/li>\n<li>Huile d&rsquo;olive, sel, poivre<\/li>\n<\/ul>\n<h2 class=\"wp-block-heading\">Le msemen ou le trid : la base du plat<\/h2>\n<p>La rfissa se monte sur un lit de pain feuillet\u00e9 \u00e9miett\u00e9. Deux options selon le temps dont vous disposez :<\/p>\n<ul>\n<li><strong>Le msemen<\/strong> : la cr\u00eape feuillet\u00e9e marocaine, la plus courante. On la pr\u00e9pare maison ou on l&rsquo;ach\u00e8te toute pr\u00eate, puis on la d\u00e9chire en fines lani\u00e8res.<\/li>\n<li><strong>Le trid<\/strong> : une p\u00e2te \u00e9tir\u00e9e tr\u00e8s finement et cuite en feuilles, plus longue \u00e0 r\u00e9aliser mais authentique. C&rsquo;est la version la plus traditionnelle de la rfissa.<\/li>\n<\/ul>\n<p>Si vous manquez de temps, des msemen du commerce font parfaitement l&rsquo;affaire. L&rsquo;essentiel est qu&rsquo;ils soient assez fins pour bien s&rsquo;imbiber de sauce.<\/p>\n<h2 class=\"wp-block-heading\">Comment pr\u00e9parer la rfissa ?<\/h2>\n<ol>\n<li>Faites tremper le fenugrec dans un bol d&rsquo;eau ti\u00e8de pendant que vous pr\u00e9parez le reste, puis \u00e9gouttez.<\/li>\n<li>Dans une grande marmite, faites revenir les oignons \u00e9minc\u00e9s dans un filet d&rsquo;huile d&rsquo;olive jusqu&rsquo;\u00e0 ce qu&rsquo;ils deviennent translucides.<\/li>\n<li>Ajoutez les morceaux de poulet, le ras el hanout, le gingembre, le curcuma, le safran, le sel et le poivre. Enrobez bien la viande des \u00e9pices.<\/li>\n<li>Couvrez d&rsquo;eau \u00e0 hauteur, ajoutez le fenugrec, la coriandre et le persil li\u00e9s en bouquet, puis laissez mijoter 45 minutes \u00e0 couvert.<\/li>\n<li>Ajoutez les lentilles et poursuivez la cuisson 20 \u00e0 25 minutes, jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient tendres et la sauce r\u00e9duite.<\/li>\n<li>R\u00e9chauffez les msemen \u00e0 la vapeur ou au four, d\u00e9chirez-les en lani\u00e8res et disposez-les en d\u00f4me dans un grand plat.<\/li>\n<li>Posez la viande au centre, r\u00e9partissez les lentilles, puis arrosez g\u00e9n\u00e9reusement de sauce chaude. Servez aussit\u00f4t.<\/li>\n<\/ol>\n<h2 class=\"wp-block-heading\">La rfissa \u00e0 l&rsquo;agneau<\/h2>\n<p>Pour une version plus riche, on remplace le poulet par de l&rsquo;agneau. L&rsquo;\u00e9paule et le collier, des morceaux \u00e0 mijoter, sont parfaits pour ce plat : ils fondent dans la sauce et lui donnent du corps.<\/p>\n<p>La m\u00e9thode reste la m\u00eame, avec un temps de cuisson un peu plus long pour la viande. Comptez 1 h 15 \u00e0 1 h 30 de mijotage avant d&rsquo;ajouter les lentilles, pour que l&rsquo;agneau soit bien tendre et se d\u00e9tache.
